You can do plenty of things without thinking about them, just because your brain is programmed to respond a certain way to various things. Getting startled by something is mainly just a stimulus overload, so your immediate reaction is something done without thought. Your mind hasn't processed what's going on so the immediate reaction would be the punch or kick or shit or run.

Sometimes, even when you've understood what's going on, you do things on a whim that you might later not even understand why you did them. Somebody could be doing something that isn't even remotely threatening, and you could attack them (verbally or physically) without reason.

So you don't know that breathing is voluntary and involuntary? You're body does it on it's own, and you can control it. Kinda like blinking. The heart beating is involuntary cause you can't control it. I highly doubt a baby is thinking about kicking and screaming when it comes out of the womb.
