I looked it up, and it appears that you have to have an Academy to train a nobleman.

To get an academy you have to have:
Village Headquarters (Level20) Smithy (Level20) Market (Level10)

I read in a guide that in most builds, creating your first Nobleman takes about 40 days (provided you don't rush through everything just to create him, of course).

But in the meantime, you can still have fun destroying other villages with your Siege Engines =/.

Speaking of destroying villages, is there any requirements I should know of about attacking someone?

You have to wait a few days after someone joins before you can attack him. Check that by simply trying to send your troops to his village.

If you want to actually destroy stuff instead of raiding for resources, you'll have to build Rams to destroy his Wall, and Catapults to destroy his other buildings. That requires at least a week of upgrading though.

If you want to attack someone other than Abandoned Villages or Barbarian Villages, that serve simply for you to gather resources off them, then I suggest you wait until you have Stable, a few Scouts that you can use to find out what kind of defenses your target has, and a decent army of Light Cavalry.

Make sure your village is well-protected before you send off your army. Of course, you can't be attacked right now so that's no problem.
