Goku only married her cuz he made that promise since he didn't know what "Marriage" was but yeah, I do find it weird how they stayed together. We probably don't see them in Peacetimes since the show would get boring but I guess there was something that made them stay.

Returns seven years later. Fights Buu. Stays only for five more years. Enters tournament and leaves to train Buu for ten years.
