only immortal character in db/z is garlic , but if we think by this logic , garlic can regenerate like buu and fix the hole in his body , so if he was hit by the spirit bomb that destroyed kid buu , will he be able to regenerate after that too since he is immortal?

Sometimes characters are immortal to natural means, but not unnatural means.

I think Roshi is immortal to natural means (old age, sickeness, etc.), but he can be killed in battle.

think of this , isn't making a person indestructible is beyond the dragon's power , the dragon is immortal but can be destroyed (king piccolo) so if he could make someone indestructible he too would be indestructible , but he's not

But doesn't the spirit bomb destroy all evil...so technically it's not a physical weapon but more like a spiritual magic one...therefore it should be able to destroy Garlic unless he turned good.

As long as there's anything left, Garlic would be able to regenerate. One could theorise he has an invunerable part of himself that could never be destroyed and that he would regenerate from that.
