Usually they go by birthdate yes? But somehow I doubt Toriyama went into that much detail when creating the characters. In fact, I don't think I've ever seen specific birthdates...Well, anyway.
But I think it's important to know the characteristics of each sign before assigning them to characters.
Aries - Agressive and arrogent, Taurus - Devoted and sturdy (as in strong), Gemini - Logical, Cancer - Protective and nurturing, Leo - Proud and Dramatic, Virgo - Practical and hard working, Libra - Cooperative and open minded, Scorpio - Passionate and Complex, Saggitarius - Free and Careless, Capricorn - Rigid and authoritive, Aquarius - progressive and sophisticated, and Pisces - Imaginitive, idealistic, Spiritual
With that in mind, Cancer is very worthy of Goku as he constantly is protecting the Earth from destruction. Aries is Vegeta for obvious reasons. That sign fits him as well as his spandex suit does.
I'd say Krillin has a pretty good Libra feeling to him. Taurus fits Gohan alright as he's a very balanced induvidual for the most part. Tien Shinhan is probably a good Pisces with the monkish feel he has to him.
Frieza and Cell both fit into a Scorpio. Since the Scorpio's complexity often leads to desire and violent tyranny.

in my opinion...Goku is a Gemini...(by astrology Gemini is termed as the boy of the zodiac..Goku's nature is somewhat like that...also Goku is ruthless when he sees that the opponent is deadly...Cancerians are by nature not ruthless...whereas Geminis can be quite ruthless..)
Vegeta is a Leo...clearly shown by his Pride and Honour..and his lack of acknowledgement of the fact that Goku is superior to him in strength...(Aries do pay respect to people better better than them)...
Gohan is a Taurus...(mentioned in the anime series..his birthday is also around may 8 or 9 th...)
Piccolo is a Capricorn....meticulous..possessing a lot of common sense and brilliant tact....
Krillin is a Aquarius judging by the way he rationalises situations.......
Tenshinhan....Pisces....his complex and super natural powers....
Cell and Frieza....I go for Scorpio....
Yamcha to me is a Libran....

I am just posting here because I don't know of this is a coincidence or not but as I was looking at this thread I scrolled to the bottom and there was an ad saying "What Zodiac Sign Are You?"

I don't know if it is there purposefully but I just found it cool. Personally I find star signs and astrology a bit of a farce and I would never take any notice of anything written about them. I do not even know which sign I would be.
