Why not mix generations?
How about Charmander (great fire Pokemon and great attack stats although weak defense), Chikarita, and Mudkip? I think your sets are fine, the most important aspect of having a team on Pokemon is balance. As long as the starters are nearly equal and have three evolution stages, I think it's fine. Well, at least it's nostalgic to have three stages. You don't need it, I mean Pikachu would be a great starter and it only has two stages. But as you stated, it should be a Pokemon that you can't find in the game.
