It isn't irrelevant. East Kaioshin made that statement like he was proud of being able to kill Freeza. He indeed was proud. He didn't know that the Z Senshi had achieved that peak several years ago. If he'd be stronger he would say for example:a thousand Freeza's or something similar. Would you compare your strenght in to a kid's strenght? It's obvious you can defeat a kid but you don't make it a indicator of your strenght.

1) Because Ssj Gotenkusu (Pre-RoSaT) is stated to be more powerful than Ssj3 Gokuu (who in turn is more or less equal to Chibi Buu), so Ssj Gotenkusu (Post RoSaT) would be more powerful than him.
2) That's the thing though, we're never given details as to how the fight progressed. All we know is that they eventually were absorbed by Buu.
3) Of course he'd be proud of it. He himself stated that he was the weakest of the Kaioushin-sama that existed at the time, and his statement was to encompass all the Kaioushin-sama that existed at the time, so he was naturally going to pick something that he himself was capable of killing in a single blast. He wasn't going to boast about the battle powers of the entire contingent of Kaioushin-sama that existed at the time, only to choose an example of power that was beyond his capabilities.
