Some notable points.

Jonny, Itachi didn't want to kill Kakashi. When he learned Kakashi knew of Akatsuki, his goal became to capture him and take him back. Interrogation, perhaps? See what the rest if Konoha know? Who gave them such information? If he wanted to kill Kakashi there, he would've, but as I said, his goal was to capture & take Kahashi with him. This was until Gai appeared & stated reinforcements would arrive soon.
Genjutsu is the manipulation of another's mind & senses. In Naruto, few are immune to high-level Genjutsu, and these characters are trained in Genjutsu themselves. Even then, they'd drop like flies before Itachi, who is easily the best Genjutsuist in Naruto. Anyone in DB/Z/GT would probably fall, if caught in Genjutsu. =/
