That wouldn't make him immune to deception.
While Buu's regeneration would be a problem, Itachi would probably realize fairly quickly that his attacks weren't taking effect, at which point, he'd probably use Amaterasu, which is...hotter than the sun, and with Buu in a Genjutsu, there's no dodging it...
