In order to create a good remake of GT, you need to go back and look at what made Toriyama's written Dragon Ball such a success. GT isn't bad simply because of the plot holes, there are other hidden elements in GT that made it suck, and people might not even notice these reasons:

Toriyama's Dragon Ball was unhindered with it's imaginative elements, GT was not. GT was nothing more then mindless fighting, there is no imaginative depth to stories like that.

All of Toriyama's characters' personalities are strong and abstract, even the minor characters. In GT, not even Goku's personality was strong. Whoever wrote Goku for GT made him dull and unexciting.

Toriyama's story is both random and simple, there's not much emotional depth to the story, but with the expansive imaginative element of it, it doesn't need to be.
